From the cocoa bean to cocoa butter

Traditional drinking chocolate is made from a blend of at least 25 per cent cocoa powder and one type of sugar. Sometimes it also contains a powdered milk component, otherwise the instant beverage will be prepared with fresh milk. Our instant white chocolate beverage contains cocoa butter, which is the fat contained within the kernels of the cocoa bean. Extracting the butter involves roasting, cracking and hulling the beans and then grinding the cleaned kernels into cocoa mass.

When this mass is pressed, it produces cocoa butter and a press cake. The press cake is processed into cocoa powder. In the production of white chocolate, the cocoa powder is removed from the mass leaving just cocoa butter behind. The EU stipulates that white chocolate must contain at least 20 per cent cocoa butter and 14 per cent milk solids. White chocolate as an instant beverage was first produced and sold in 1930 – laying the foundation for our instant white chocolate.
