From the cocoa bean to cocoa butter

“Common” chocolate is made from cocoa mass, sugar and often cocoa butter and milk products as well. Cocoa butter is the fat contained in the cocoa bean. For its extraction, the cocoa beans are roasted, hulled and cracked. Next, the cleaned cocoa beans are ground into cocoa mass. When this mass is pressed, the resulting products are cocoa butter and a press cake.  The press cake is processed into cocoa powder.

For the production of white chocolate, the cocoa powder is removed from the cocoa mass leaving the cocoa butter behind. The EU stipulates that white chocolate has to contain at least 20 percent cocoa butter and 14 percent milk powder. White chocolate was made and sold for the first time in 1930 - this laid the foundation for today’s instant “white chocolate type” beverage.
